paten is Jacob Hatzmann, mueller zu....

who can tell me which place is meant there? Area Diez/Flacht/Fachingen/Staffel. I just don't see it:'(

I think this is "Dierstein". It is better to read this in later entries in this church book.

There was a Benedictine monastery near Diez called Dierstein. Either the monastery or its surroundings are meant.
 
The monastery itself was destroyed in the Thirty Years' War, but the former monastery mill is still a place for excursions. The people in your baptismal entry were millers, so that would fit.

Hatzmanns in a later generation were millers at Oranienstein which was built at the site of Dierstein according to Franz' link. Are we talking about the same mill here?

Yes, this is exactly what I meant. There was a "Klostermühle" (Monastery Mill).
